How to feed 8 hungry men and one pixie

As it turned out, my gut isn’t ready for lasagna yet. However, the guys loved it so much that they requested it again and are trying their best to convince me not to move out of state. Not bad for an avowed non-cook, eh?

Pixie’s Lazy Picollo Lazagna (cooked in two oval casserole dishes):

1 family sized package ground turkey
1 jar (26 ounces) Classico italian sausage spaghetti sauce
1 jar (26 ounces) Classico classic beef or four cheese spaghetti sauce
16 ounces low fat cottage cheese
16 ounces sour cream
8 uncooked lasagna noodles (yep, just 8 )
1 pound mozzarella, sliced
some grated Parmesan cheese
1-1/2 cups water

Brown turkey; drain fat. Add sauces, simmer and stir; set aside. Combine cottage cheese and sour cream. Start layering.

Round 1: Meat sauce, noodles, cottage cheese, mozzarella, meat sauce, parmesan.

Round 2: Noodles, cottage cheese, mozzarella, meat sauce, parmesan.

Pour water around sides of pans. Cover tightly with foil. Bake in preheated 350 F oven 1 hour.

Uncover; bake 20 minutes more or until bubbly. Let stand 15 to 20 minutes.

(16 – 20 servings)

Stupid Request Form

This is still a little premature but, YAY! There was a message waiting in my voicemail this afternoon; a message indicating that all the hard work we’ve been putting into beta-beta-three might be paying off. Thank you for your great energy! The paperwork, in the form of an SRF, is making the rounds. (As it turns out, SRF stands for STAFFING Request Form. Oh, riiiight.) We’re hoping it will complete the circuit next week. I’d send some virtual brownies to grease the wheels, but our network is under tight security and they’d probably be “confiscated” as a virus. Although there are still no promises being made, the Voice is sounding much happier and beginning to make stronger statements about the possibility of transfer. So, unless something goes horribly awry during the interview, the job appears to be mine to lose.

Second verse, same as the first… come on, you SRF. Move faster!
